    Adding Pictures

    I know I haven't posted in a little while, but I am going to post a bunch of pictures now.  I was for some reason unable to upload from my camera after I loaded up a new printer, but I got it sorted out.  So, there are I believe three albums going up now.  I'll try and post an update soon.

    Yummy!

    My first use of my newly ground mesquite flour - yummy pancakes!  I don't fully understand why things with mesquite flour (at least mine) come out looking a little green, but they are good anyway, and what a different flavour.  Try this...
     

    Anastasia’s Mesquite Pancakes

    From Anastasia Rabin
    DRY MIX:
    2 cups mesquite flour
    2 cups whole-wheat pastry flour
    1 tablespoon baking powder
    1 and 1/2 teaspoons baking soda
    1/2 teaspoon salt

    Make as much dry mix as you like and store in a cool dry place for later use.

    To make pancakes for two people mix the following WET INGREDIENTS:
    1 egg
    2 tablespoons oil
    2 cups of liquid (milk, buttermilk, or a milk substitute)

    Beat the wet ingredients together, then add a cup of dry mix. Add liquid or mix as needed to get the desired consistency. I like to make my batter thick for extra hearty pancakes. Mesquite burns easily so be careful when cooking. Lowering the temperature of your griddle can help.

    Our Own Mesquite Flour - Cool!

    Yesterday Josh took the mesquite pods we collected from our tree this year (not too many, since we were in Asia for most of the "dropping" season) to the Downtown Phoenix Market to have them ground.  He was kind of assigned the task because I had to work.  There's a group that comes to grind once a year - he said it's like some old hippies with a mill they bring into town.  It's called Desert Harvesters and they even have a website.  Anyway, they grind your pods (mostly mesquite and carob, I believe) for a donation.  We ended up with a large tupperware of mesquite flour quite inexpensively (Josh said they told him they suggested $5, but he said they were really nice and helpful, so he gave them $10).  Considering online I found 16 oz for almost the same price, I would say we did fine.  Now I have some mesquite flour to integrate into recipes, and it's so much more fun when it's your own!  Hopefully next summer we will get even more pods...
